Monster Cookies

Peanut butter oatmeal cookies filled with M&M candies and chocolate chips.

Ingredients
  

  • 1 cup (120g) all-purpose flour
  • 1⅓ cup(126g) old fashioned rolled oats or quick oats
  • ½ tsp salt
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • 1/2 cup (113g) unsalted butter at room temperature
  • 1/2 cup (100g) granulated sugar or caster sugar
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 cup (115g) peanut butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup (170g) favorite kind of M&M candies (I used peanut M&M's)
  • 1/2 cup (85g) semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F.
  2. In a large mixing bowl stir the flour, oats, salt, baking powder, and baking soda. Set aside.
  3. In a stand mixer with a paddle attachment or a large bowl with a hand mixer, cream the butter and sugars together until light and fluffy. (About 2 minutes.)
  4. Beat in the peanut butter, then the egg and vanilla.
  5. Add dry ingredients into the wet mixture and mix just until combined. Fold in M&M's and chocolate chips.
  6. Form cookies into 3 tablespoon balls and place on a prepared cookie sheet.
  7. Bake cookies for 15-17 minutes, if making smaller cookies bake for 10-12 minutes.
  8. Let cookies cool on pan for 5 minutes then let finish cooling on a wire rack. Enjoy!
